Wasabi is the green Japanese mustard that accompanies sushi. It is a plant that requires plenty pure, cold water and cool temperatures to grow.
Well-maintained wasabi fields often consist of terraced plots along mountain streams. As this one has been abandoned, little waterfalls have broken out of what was once a carefully planned watercourse.
